A vineyard with a shape
Chablis has seven Grand Crus. That is well known. What fewer people stop to feel is that each one carries its own personality and Vaudésir carries something particular, almost quietly mystical: an elegance that cannot be imitated.
It begins with geography. The vineyard sits in a natural amphitheater, a gently curved hollow that embraces the sun from early morning until dusk. This is not myth. It is physics. The enclosed shape shields the vines from the northern winds, smooths out temperature swings, and allows the Chardonnay to ripen slowly, steadily and, most crucially, evenly. Every cluster arrives at the same moment of readiness. The result, in the glass, is harmony.
The character: Velvet that does not forget its soul
In a region that knows how to deliver acidity like a blade — mineral, limestone, the fossilised shells of a sea that once covered this land — Vaudésir does something paradoxical. It holds the mineral. And then wraps it in silk.
On the nose: citrus brightness, white blossom, a whisper of quince. And underneath, that characteristic mineral density, not felt as stone, but as underground life.
On the palate, the experience unfolds slowly. The acidity is present, undeniably, but it moves inside a light, gentle richness that gives it depth without weight. The finish leaves a saline, almost tidal sensation. The kind of finish that makes you look at the glass and stay quiet for a moment.

I serve it a little cooler than most people dare with a Grand Cru. Around 10–11°C. I let the glass open slowly. And the result needs no commentary.
